Mango Salsa Salad

Here is a delicious way to combine mango salsa with greens to make a beautiful, antioxidant-rich salad. Serve this salad for dinner tonight as a side with grilled burgers, fish or chicken. Or bring it as a side to your next pot-luck. You could add grilled chicken or chick peas to the salad in order to increase the protein content and make this a stand-alone meal. I think the champion of this salad is the peach mango goat cheese. I got it at Aldi, which makes it even better. Did you know that Aldi is owned by the same company that owns Trader Joe's? We don't have a Trader Joe's in my town, but we do have an Aldi and for that I am grateful.

If you can't find the peach mango goat cheese, normal goat cheese or even feta will be good substitutes.

The following recipe is for one large serving. You can easily double or triple the ingredients to suit your family's needs.

Start with a heaping handful of mixed greens.

Add half of a diced orange bell pepper.

Next add the mango, red onion and cilantro.

The squirt the lime juice over the top. This, in combination with the cilantro, will make your fingers smell delicious.

Then comes the goat cheese. Just crumble it over the top.

Done. Quite possibly the best salad you've ever made!
