With September rolling in, it is time for the summer and fall produce to really start showing up--whether it be in your garden, your kind and sharing neighbors', or the farmer's markets. At a price of practically free, I find that I load up on an abundance of these veggies every Saturday. I am always looking up new recipes to try with all the different vegetables, but often come back to a few select staple recipes. This recipe today is for Lime Steak Fajitas, which were introduced to me by my mother-in-law though I am unsure where they originated from. We have been making this recipe for quite a few years now and honestly have not changed it one bit which is pretty rare for me! This recipe uses up the abundance of bell peppers that seem to be everywhere. At $1.00 for three peppers at the farmer's market these days, it comes to a pretty cheap-o meal which is always good in my book! I hope you enjoy them as much as we do!
Also, if you are feeling a little extra ambitious, be sure to try making your own tortillas!
Feel free to play around with the ingredients a little bit. I rarely actually buy flank steak--just whatever good looking steak I can find that week at the store. You could omit the meat completely and still have a very flavorful vegetarian meal. Add a side of fresh guacamole by mashing together 1 avocado, a handful of chopped onion, chopped cilantro, some minced garlic, salt and pepper and a squirt of lime juice. You could even blend up some margaritas! Now we are talking! :)
